Tom started the restaurant a little over five years ago, after winning the Montana-based John Ruffatto Business Startup Challenge. Tom used the winnings to travel to Brazil and refine the restaurant's menu. After a lot of experimenting and a few recipe disasters, Tom opened the first restaurant in 2013 in Missoula, Montana with the help of his wife.
