From Cake To Tart, Zucchini Has A Place At The Table

Herbed Zucchini, Summer Squash and Ricotta Tart

An abundance of zucchini can leave gardeners and cooks overwhelmed at the end of summer. Stories abound of neighbors dropping off excess zucchini late at night, but the Food Guys recommend getting creative. From sautéed side dishes to chocolate cake, zucchini is highly versatile. Greg suggests the zucchini cheese tart recipe below.

Zucchini Cheese Tart Recipe

Preheat oven to 400 degrees F.

Unfold crescent rolls from the tube and press edges together to make a 13x9" tart base on a baking sheet.

Sauté two pounds of thinly sliced zucchini in one tbsp olive oil. Once soft, add salt and freshly ground pepper. Place sautéed zucchini on top of the crescent roll crust. Sprinkle with shredded cheese.

Bake at 400 degrees F until crust is golden, about 16-19 minutes. Remove from the oven and let cool on a wire rack.
